Lite Accents Asian Pear Slaw
Start to finish: 25 minutes
2 Asian Pears, firm, cut into matchsticks
4 Celery Ribs, peeled and cut into matchsticks
2 scallions, sliced diagonally
1/4 cup Fresh Cilantro leaves, chopped
1/3 teaspoon Red Chile, finely chopped
3 tablespoons Fresh Lime Juice
10 sprays Lite Accents Asian Vinaigrette
* A mandoline is a slicing device that comes in very handy when putting together any kind of slaw that requires a thinly cut vegetable. Most come with various blades to adjust the thickness of the slices.  They work best with firm fruits and vegetables.
Mix together pear and celery matchsticks, scallions, and chile.  Add lime juice and 10 sprays Lite Accents Asian Vinaigrette and toss together.  Top with chopped cilantro and toss again, adding more Asian Vinaigrette if desired. Slaw should be coated thoroughly, but not soggy.  Let stand at room temperature for about 15 minutes before serving.
