Mix the ground beef, salt and pepper in a large bowl and form the mixture into 3 equal-size balls. Make a well in the middle of each ball and flatten meat. Place 1/3 of the cheese in the well and reform the ground beef around the cheese, sealing it tightly. Then form the balls into hamburger patties, about 1/2-inch thick.
Mix Ken's Ranch Dressing with 1 chipotle pepper and 1 tbsp. of adobo sauce. Reserve remainder for another use.
Grill burgers until desired doneness. Top with lettuce, onions and Ranch-chipotle sauce.
