Preheat oven to 375° F. Make a small hole in potatoes with a knife or fork and cook in microwave for about 5 minutes or until tender. Set aside until cool enough to handle.
Cut potatoes in half and scoop out the middle, leaving about a 1/8 of an inch. Place potatoes on a sheet pan and sprinkle with salt and pepper. Divide the shredded cheddar cheese evenly among the potatoes.
Top with bacon and cook about 15 minutes or until cheese is melted and potatoes are crispy. Remove from oven, top with Ken's Lite Buttermilk Ranch Dressing and sprinkle with chives. Serve additional dressing on the side.
