Preheat oven to 275° F. Place the ribs in a large roasting pan. Generously salt and pepper both sides. Distribute onions and garlic over and under the ribs.
Whisk together the beer and 1 cup of Ken's Honey Mustard Dressing. Pour dressing over ribs to coat. Cover with aluminum foil. Cook for 4 hours.
Meanwhile, in a small saucepan combine 1/2 cup Ken's Honey Mustard Dressing, maple syrup, horseradish and hot sauce. Cook until reduced by 1/3. Remove ribs from pan and set aside.
Preheat oven broiler or outdoor grill to high and add ribs. Baste the ribs with the reduced sauce on both sides, turning once and basting again. Approximately 3 minutes on each side.
